First of all, that depends on how you define conservative/progressive. You're applying anachronistic categories where they don't belong.

And there are plenty of books about how it changed. Go to your library and read some of them. One good short one, which covers the mid-20th century in the South (where some of the most important events in this process took place) is "The Disruption of the Solid South" by historian George Tindall.

Question: How many slaves is considered too many?
