You would do better if you dropped the modern and jazz and just concentrated on ballet to begin. Ballet is where all your dance technique comes from. Doing multiple genre like these that work the muscles in different ways and creates muscle confusion for a beginner and will actually slow down your progress. Try taking 2 or 3 ballet classes a week to start. When you eventually add other genre it will be much easier and you will be far ahead of where you would have been had you started all at the same time.

Realistically no matter how gifted you might be in dance or how good your training is, in two years if you trained 5 days a week 5 hours a day you would still basically be a beginner in terms of the larger picture. There is a saying that goes "It takes 10 years to 'make a leg' in dance."

Yeah. Drop jazz and take ballet so you can learn what you are doing correctly. Then when you take jazz you won't be so lost. It isn't just about doing splits. If it were you would be doing gymnastics not dance. Most better schools don't allow jazz without taking ballet first. It's like trying to learn a language by trying to read a book in that language and skipping learning the vocabulary. Anyone who try's to do it the way you are doing it is certainly going to suck in class.

To help with flexibility you cannot ignore stregth too. What's the point of being flexible if you don't have the strength to use it. There needs to be a balance. Try taking some floor Pilates. It builds strength and flexibility.

If your knee hurts you are doing something very wrong and are injuring yourself. You are either working incorrectly or pushing yourself too far. Are you warming up before you stretch? You have to get your heart rate up before any stretching.
