This is what Ancestry.Com has

Esparza Name Meaning Castilianized form of Basque Espartza, a habitational name from Espartza, a village in Navarre province.

So a person from the village of Espartza could have had the name whether Jewish or Catholic.

Question: Do these last names have jewish ancestry olivo,arellano,mauricio,castillo,vidales,,salas,de luna,vasquez?

Surnames in themselves do not have an ancestry or a family history despite the numerous peddlers of surname products who want you to think so in order for you to spend money with them.

Your ancestors with a particular surname had the history not the name itself. When surnames were taken in Europe during the last millennium it wasn't to identify people as a member of a family but just to better sort them out on records. When they got through legitimate sons of the same man could have wound up with a different surname and still each could have shared his with others with no known relationship. There might have been Jews with those names and at the same time Catholics with those names. In genealogy a big mistake people make is trying to trace names rather than the individuals with the names.
