Why are ballet, tap and jazz so important?(I have nothing against them, just wondering) Details Below?

I'm just wondering because I can understand Jazz a little bit because it is fast paced and dancers actually use it but when I look for dance classes, those three come up always under the children's dance classes and I was just wondering why children should learn those three first before anything else especially ballet and tap if they don't want to be a tap dancer or a ballerina but a hip hop or a salsa dancer or whatever kind of dancer. Again, I have nothing against those dances, I have just always wondered.

how to memorize a dance choreography FAST!?

Okay so my new dance teacher gives us dance moves fast like no time to actually practice, he be like 5,6,7,8 than we'll repeat after him than he'll do the next part like 5,6,7,8 than we'll repeat that, than Another part than we'll repeat that than he be like (OKAY!!!!! NOW FROM THE TOP!) Like how can I actually remember in like a minute. PS if I ask him to slow down I can't memorize them so fast he'll say (We are professional we don't have time to move slow JUST DO IT!) He's very mean when it comes to his dance moves.
